Chocolate cornflakes cakes: the simple bites that the whole family will love

Cornflakes Cake Ingredients

Cornflakes – use any brand you like, but we prefer Kellogg’s cornflakes (you can also use bran flakes or Special K)

Chocolate – the chocolate used depends on your taste preference: dark chocolate will be slightly bitter, whereas milk chocolate will be sweeter.

For the perfect balance of sweet and bitter, use a combination of dark and milk chocolate.

Have sweet tooth? Use white chocolate only for a sweet, crispy treat.

You can also add fun toppings (do this before the chocolate sets): mini easter eggs, rainbow or chocolate sprinkles, or even coconut flakes.

Tips

Melt the chocolate in the microwave at 50% or over a double boiler. To set up a double boiler, you’ll need a medium-sized pot and a heatproof bowl (usually glass). Make sure that the bowl and pot fit nicely onto each other—the bowl should be resting on top of the pot (in other words it should be larger). Place water inside the pot (it should not touch the bowl) and place over medium heat. Roughly break up the chocolate pieces and place them in the bowl. Stir until all the chocolate is melted.

If you want the chocolate to be shinier once set, you can add a bit of butter to the melted chocolate.

When mixing the chocolate with the cornflakes, scrape down to the bottom of the bowl to make sure all the chocolate is mixed through.

Make sure to use baking chocolate and not regular eating chocolate from the candy aisle—regular chocolate won't melt and set properly.

You can make these cornflake cakes up to 3 days ahead of time. In winter, you can store them at room temperature otherwise they’re best kept in the fridge.
