We love all things potatoes! And who doesn’t love fried potatoes? Made with mashed potato, they’re small, crispy, and have that amazing starchiness that we all love. Add some carrots, baked ham, and spring onions to the mix and you have a delicious recipe that will be loved by all! This dish is perfect for any occasion – whether you’re looking for an appetizer or a starchy side dish. And the best part is that it’s so easy to make! Simply mix the ingredients together, form them into balls, and fry! As easy as that! It’s also a great way to use leftover mashed potatoes.

Mash the potatoes by hand, don’t be tempted to use a food processor. Using a food processor might over-process them and make them gluey. Use a potato masher or grate them with the large holes of a box grater.

Make sure to use a neutral oil suitable for frying at higher temperatures. Canola oil, peanut oil, sunflower oil, or corn oil will be suitable. Don’t make your oil too hot, otherwise, the potato fritters will burn too quickly. Use a thermometer to heat the oil to about 350°F. Don’t overcrowd the pan, as this might cool the oil down too quickly.

How to Store Potato Fritter Balls

Keep the leftover potato fritter balls in the fridge for up to 3-4 days. Reheat them in the air fryer or oven (for crispiness). You can reheat them in the microwave, but they won’t stay as crispy.

Can You Freeze Potato Fritter Balls

Yes, you can! Allow the balls to cool completely, then freeze them in an airtight container for up to one month.

Can I Make Potato Fritter Balls in the Airfryer?

Yes, you can make these fritters in the Airfryer. Place the potato balls in the Airfryer basket, and spray with oil. Cook for 15 minutes at 400°F/200°C, turning halfway.

Can I Make It Ahead of Time?

The potato fritter balls are best served fresh, while they’re hot and crispy.  While cooking them, you can keep the fritters warm in the oven at 200°F (100°C).

Ingredients
Potatoes
1kg
Cornstarch
5tbsp
Baked ham
80g
Carrot
1
Green onions
3 tbsp
salt
1 tsp

Peel and slice the potatoes. Boil in water until soft.

Drain and mash.

Add the carrots, green onions, cubed ham, salt, and cornstarch.

Use your hands to mix all the ingredients until fully combined.

Scoop out small amounts of the mixture and form into balls.

Repeat.

Fry the potato balls in hot oil until golden brown.

Serve warm!
