Potato roses: to be enjoyed with every bite!

They only take 10 minutes to prepare

INGREDIENTS

2 potatoes, thinly sliced

12 slices bacon

15ml (1 tbsp) olive oil

1g (1 tsp) rosemary

1g (1 tsp) oregano

1g (1 tsp) chives

6g (1 tbsp) Parmesan cheese

METHOD

Preheat the oven to 200°C/400°F.
In a bowl mix potato slices with herbs, olive oil, and parmesan.
On a working surface arrange 2 bacon slices slightly overlapping each other.
Arrange 8-9 potato slices in a single layer, slightly overlapping one another over 1/3 of the width of the bacon, and roll it up. Continue with the remaining bacon and potato slices.
Place potato roses into a muffin tin, cover with foil, and bake in the preheated oven for 20 minutes. Take off the foil and continue to bake for another 20 minutes.
Serve immediately.
