Quark cheese fritters: how to make them soft and delicious!

These quark cheese fritters take about 10 minutes to prepare and are the perfect snack for the kids after school or to pack in their lunches. You won't be able to stop at one! 
 
INGREDIENTS
500g (3 cups) flour
4 eggs
500g (2 cups) quark
250g (1 cup) sugar
7g vanilla sugar
8g baking powder
a pinch of salt
Sugar (for coating)
Vegetable oil (for frying)

METHOD
  1. In a bowl beat 4 eggs, quark, sugar, and vanilla sugar until smooth.
  2. Add flour and baking powder and process the batter with a hand mixer until homogeneous.
  3. Transfer the batter into a piping bag.
  4. Heat vegetable oil in a pan. Insert a chopstick into the oil to check if the oil is hot enough. When bubbles appear, start frying.
  5. Hold a piping bag just over the pot with oil. With scissors cut off 1,5-2 cm of batter to obtain small fritters. Fry 4-5 fritters at a time for 3-4 minutes or until golden.
  6. Let drain, roll the fritters over in sugar, and serve.
