INGREDIENTS

400g (3 1/4 cups) flour

1 egg

250ml (1 cup) milk

7g dry yeast

Salt
2 tbsp sugar
15g (1 tbsp) butter

30ml (2 tbsp) olive oil

3 eggplants

8 eggs

1 egg yolk

100g grated cheese

Pinch of salt

paprika

30g sesame seeds

30g black sesame seeds

METHOD

Mix flour, egg, milk, yeast, salt, sugar, and butter very well until you form a uniform ball. Leave in a bowl, cover with cling film and let it rest for 2 hours.
Flatten the ball into a large circle. Cover with cling film and let it rest for 30 minutes. Cut several slices of eggplant. Use a glass to cut out the center, forming a ring.
Divide the circular dough into 8 triangles, cutting only the center.
Place the 8 eggplant rings in the dough, then fold a corner from the center of the dough over the eggplant.
Use a fork to press down the dough inside each circle then pour in an egg. Brush the entire dough with a beaten egg.
Add black sesame to the inside of the dough and white sesame to the outside. Add salt, pepper and bake for 20 minutes at 180°C (356°F).
Sprinkle grated cheese on top of each egg and then some paprika, bake for 10 minutes at 180°C (356°F).
