Bacon cups are filled with cheese, and eggs, and baked until golden. The crispy bacon adds a smoky flavor, while the cheese makes it just a little bit indulgent. How To Make Bacon Egg Cups

These bacon egg cups come together in no time, so it's perfect for busy mornings. Place two slices of bacon in a cross shape in each hole of a greased muffin tray. Add a small amount of grated cheese to the cup. Add eggs, salt, and pepper to each hole.

Now carefully fold the outer ends inward to form a bacon flower. Bake at 200ºC (392ºF) for 15 minutes.

These Bacon Egg Cups are so easy to modify according to your taste preference.

Want more meat? Add sausage meat, chopped hot dogs, smoked chicken breast, smoked salmon, or tuna.

Make it cheesy by adding feta cheese, goat’s cheese, cheddar cheese, Swiss cheese, or gruyère.

Need more nutrients? Add more veggies: wilted spinach, steamed broccoli, roasted red peppers, sweetcorn, cubed carrots, caramelized onion, etc.

Try a combination of red pepper and feta cheese, mushroom and mozzarella, or spinach and tomato.

When using vegetables with a high moisture content (like spinach and mushrooms) make sure to cook off the excess moisture first before adding the veggies to the muffin cups. If you skip this step, the cups won’t set properly.

Tips

The bacon egg cups are best served fresh but can be made ahead of time. Place the bacon in the muffin holes, add the cheese, and refrigerate. Then just before baking, add the egg.

You can use egg white instead of a whole egg.

You can also make the bacon egg cup in the Airfryer. Place the bacon and cheese in an Airfryer-safe muffin tin, and place in the Airfryer for 5 minutes at 400°F. Add the egg and air fry for 5 more minutes.

Store leftovers in the fridge (in an airtight container) for up to 2 days.

Can You Freeze Bacon Egg Cups? 

Yes! Wait for the bacon egg cups to cool, wrap in plastic, and freeze for about 2 months. Thaw in the microwave and heat to eat.
