Giant potato croquettes: easy, fast and so delicious

Ingredients:
1 kg of potatoes
30 gr of grated Parmesan cheese
salt and pepper
15 gr of corn starch
2 eggs
Ingredients for the breading:
2 eggs
bread crumbs
flour 00
Filling ingredients:
mozzarella cheese
salami or other cured meats
Directions:
1. First boil the potatoes and mash them.
2. Then add Parmesan, salt, pepper, starch, eggs and mix until they form a loaf.
3. Now prepare the croquettes by passing them in flour, eggs and breadcrumbs.
4. Fry them and then stuff them.
5. Bake at 356°F (180°) for 10 minutes.
