Mimosa cake: the tasty and fluffy Italian dessert

This delicious dessert is typically made in Italy on the International Women's Day (march 8th). It is called "mimosa" as the flower traditionally associated with this holiday.
Ingredients:
- For the batter:
6 medium eggs (at room temperature)
180 g of sugar
180 g of flour
- For the cream:
4 egg yolks
100 g of sugar
50 g of cornstarch
500 ml of milk
Vanilla bean / Lemon zest
400 ml of whipped cream (sweetened)
200 g of pineapple in syrup
- For syrup:
200 ml of pineapple syrup
Directions:
1. Whisk eggs and sugar for about 6 to 7 minutes.
2. Gradually and slowly stir in sifted flour.
3. Pour the batter into a mold (24 cm diameter) and bake in a pre-heated oven at 165 degrees for about 50 minutes.
4. Let cool completely, the cut the top part.
5. Cut the inside too and crumble it with your hands.
6. Mix whipped cream into custard.
7. Now assemble the cake. Wet the base using pineapple syrup, the make a layer of cream, some diced pineapple and some crumbled sponge cake.
8. Use the cream to coat the entire cake too.
9. Now cover with some more crumbled sponge cake and decorate with diced pineapple and some mint leaves.
