Potato square fritters: crunchy and ready in no time!

INGREDIENTS
3 medium potatoes, peeled and cut;
½ tsp salt;
15g (1 tbsp) sugar;
25g (1 ½ tbsp) cornstarch;
25g (1 ½ tbsp) rice flour;
3g (½ tsp) baking powder;
Fresh parsley, chopped.
METHOD
1. Place a pot of water over medium heat and add potatoes. Boil until softened.
2. Drain and mash potatoes, then mix the puree with sugar, salt, cornstarch, baking powder, and rice flour. Optionally you can add some finely chopped parsley.
3. Put potato dough into a zip-lock bag and flatten it down using a rolling pin.
4. Carefully cut the bag and slice the potato dough into squares.
5. Heat up vegetable oil over medium heat and add potato squares to it. Cook until golden and slightly puffed up (around 3-4 minutes).
