Pressed olives: the perfect conserve for the winter season!

A delicious way to preserve olives all year long!
INGREDIENTS

Raw green olives
Wild fennel seeds
Dried red pepper
Garlic
Dried hot pepper
Salt to taste
Olive oil
METHOD
- Wash raw olives very well.
- Use a stone to crush each olive and remove the pit.
- Place in a bowl with water and rinse. Then cover with water again and let rest for 4 days, changing the water every day.
- Squeeze the olives to drain the water, place in a bowl.
- Cut several slices of garlic and place in a bowl, add dried chili and dried red pepper, salt, fennel seeds and pour over the olives, mixing everything very well.
- Place the mixture in sterilized glass jars, press down, and fill with olive oil. Cure for 5 days. Then they are good to eat and will last for up to a few months in the jars.
