Pressed olives: the perfect conserve for the winter season!

A delicious way to preserve olives all year long!

INGREDIENTS
Raw green olives
Wild fennel seeds
Dried red pepper
Garlic
Dried hot pepper
Salt to taste
Olive oil

METHOD
  1. Wash raw olives very well.
  2. Use a stone to crush each olive and remove the pit.
  3. Place in a bowl with water and rinse. Then cover with water again and let rest for 4 days, changing the water every day.
  4. Squeeze the olives to drain the water, place in a bowl.
  5. Cut several slices of garlic and place in a bowl, add dried chili and dried red pepper, salt, fennel seeds and pour over the olives, mixing everything very well.
  6. Place the mixture in sterilized glass jars, press down, and fill with olive oil. Cure for 5 days. Then they are good to eat and will last for up to a few months in the jars.
