Pumpkin rice fritters: an explosion of taste and perfect for any occasion!

These are really yummy, so crispy, and delicious to try right now!

INGREDIENTS

500g cooked arborio rice
600g pumpkin
2 garlic cloves
30ml (2 tbsp) oil
100g (1 cup) speck
100g (1 cup) smoked cheese
5g (1 tsp) granular broth
25g (2 tbsp) parmesan
Breadcrumbs
2 eggs
Salt
Pepper

METHOD

In a pan put the pumpkin cubes. Add garlic, salt, and oil. Put the lid and cook it for 5 minutes.
Take the garlic out and mash the pumpkin. Add granular broth and cooked arborio rice. Mix it well and add breadcrumbs and pepper. Let it cool down.
Take some of the mixtures and fill them with speck and cheese. Close it and cover with eggs then breadcrumbs.
Fry it in a pan. Serve.
