Ingredients:
Shortcrust pastry:
75g butter
25g almond flour
50g powdered sugar
1g salt
30g egg
125g "00" flour
Ganache Chocolate:
180g milk chocolate
125g cream
15g honey
10g rum
Cocoa glaze:
50g sugar
20g cocoa
3g gelatin
35g water
30g cream
Directions:
1. Shortcrust pastry: soften the butter, then add the icing sugar and integrate well. Then add the salt, almond flour, egg and flour. Mix well and form a homogeneous dough. Then leave it in the fridge for 1 hour.
2. Then roll out the pastry and bake at 340°F (170°) for 35 minutes.
3. Then brush an egg yolk on the base and bake at 140 ° for 5 minutes.
4. Ganache: chop the chocolate. Heat the cream with honey and rum, then add the chocolate and melt it. Pour the mixture over the tart and leave in the fridge for 2 hours.
5. Icing: mix sugar and cocoa. Then soak the gelatin. Heat the cream and add sugar, cocoa and gelatin. Pour the glaze over the tart and leave in the fridge for another 2 hours.
