Chocolate stuffed brioche: the easy dessert to absolutely try

Ingredients:
200g Manitoba flour
30g sugar
1 pinch of salt
140g milk
8g brewer's yeast
15g butter
CHOCOLATE DIPLOMATIC CREAM:
100g milk
20g egg yolks
15g sugar
8g rice starch
2.5g gelatin in sheets
50g dark chocolate
150g cream
10g sugar
Directions:
1. Dissolve the yeast in the milk and mix well.
2. In a bowl, mix flour, sugar and salt.
3. Add the milk and start working everything, then add the butter.
4. Let it rise for an hour.
5. Cream: soak the gelatin in cold water. Separately, mix the egg yolks with sugar and starch. Add the hot milk and let it thicken on the heat. Then add the gelatin and the chocolate. Mix everything. Whip the cream and integrate it.
6. Divide the dough into 6 equal parts and let them rest for an hour.
7. Brush with egg yolk and milk, then bake at 356°F (180°) for 15 minutes.
8. Stuff and serve the brioche.
