Stuffed eggplants: la light and tasty recipe!

A tasty dinner idea that everyone will love! 
 
INGREDIENTS
2 eggplants
100g mozzarella cheese
100g feta cheese
1/2 yellow bell pepper
1/2 red bell pepper
2 egg whites
2 egg yolks

METHOD
  1. Cut off the top part of the eggplants. Spread them with oil and bake at 200°C (390°F) for 20 minutes.
  2. Cut cheese and peppers.
  3. Fill the eggplants with cheeses, pepper and egg whites, bake for 20 minutes more, add egg yolks on top and bake for 5 minutes.
