Chocolate cream and cherry cake: the perfect recipe to refresh your afternoons!

A delicious dessert ready in no-time!
INGREDIENTS
For the cream:
150g (1 cup) cherries
15g (1 tbsp) brown sugar
200g (0.9 cup) cream cheese
250ml (1 cup) whipped cream
5ml (1 tsp) vanilla extract
For the biscuit:
180g (1.8 cup) crushed dry biscuits
15g (1 tbsp) cocoa powder
100g (0.4 cup) melted butter
For the glaze:
150ml (0.65 cup) fresh sour cream
150g (1.5 cup) dark chocolate
For the decoration:
Chopped chocolate
Cherries
METHOD
- Add melted butter to the crumbled biscuits, then pour the combined mixture into a mold and press. Leave in the fridge while you make the cream.
- Peel a squash, grate it and sprinkle with brown sugar. Pour the cherries into the pan and cook until they release a fine juice.
- Whip the whipped cream, add the cream cheese, powdered sugar, vanilla extract, mix everything into a fine whipped cream, then add the cherry compote and mix with a spatula.
- Pour the cream over the biscuits and leave it in the fridge for 5 hours.
- Prepare the glaze, heat the whipped cream and add the chocolate, combine everything and pour over the cherry cream.
- Leave the cake in the fridge for a while to cool and squeeze the icing.
- Decorate the cake with chopped chocolate and cherries.
- A great combination of cream cheese, with cherries compote, on a crunchy biscuit and everything topped with chocolate, will make your day.
