Soufflé castella cake: the typical Japanese recipe, very fluffy and fragrant!

This is the fluffiest cake ever!
INGREDIENTS
INGREDIENTS
70g (1/2 cup) flour
70g melted butter
80ml (1/3 cup) milk
5 egg yolks
5 egg whites
1 tsp vanilla extract
90g sugar
1/4 tsp lemon juice
1/4 tsp salt
METHOD
- In a bowl sift the flour, salt, melted butter and milk, add in egg yolks and vanilla.
- Beat well egg whites with sugar and lemon juice. Mix everything together and transfer to the baking pan.
- Bake with water at 150’C (300’F) for 60 minutes.
