Stuffed eggplant: easy and quick to prepare!

A tasty way to cook eggplants!
INGREDIENTS
2 eggplants
Olive oil
Bread (soak in the milk)
50 (1/2 cup) parmesan cheese + for sprinkling
50 (1/2 cup) parmesan cheese + for sprinkling
2 eggs
METHOD
- Brush the eggplant with olive oil and bake in the oven at 200 ° C for 20 minutes.
- Remove the inside of the eggplant and mix it with the milk and bread and parmesan cheese to prepare the filling.
- Put the filling in the eggplant, sprinkle with parmesan cheese and add the egg whites on top, and bake in the oven at 200 ° C for 10 minutes.
- Add egg yolks and bake for another 3-5 minutes.
