Savory muffins stuffed with zucchini: fluffy and fragrant!

The perfect alternative to bread, so fluffy and delicious!

INGREDIENTS
190g (1 ½ cup) flour
60g (1/3 cup) potato starch
60ml (1/5 cup) milk
3 eggs
10g (2 tsp) baking powder
70ml (1/3 cup) oil
50g (1/4 cup) parmesan
150g (1 cup) cheese
1 zucchini
Salt

METHOD
  1. Whisk the eggs. Add yogurt and oil. Mix. Add flour and baking powder. Whisk the mass.
  2. Add parmesan and stir. Stir in the chopped salted zucchini.
  3. Pour half a measure into a muffin tin. Add pieces of cheese, then pour the rest of the mixture.
  4. Bake at 360°F / 180°C for 30 minutes. To serve.
