Beets and chocolate cake: this will surprise you!

This chocolate cake with a moist and tender crumb includes a vegetable that no one would ever know is hidden inside: beets! The result will surprise everyone! 

INGREDIENTS
 400g (3-4 medium) beets, cooked and peeled;
 4 eggs;
 a pinch of salt;
 150g (⅔ cup) sugar;
 100g (1 cup) cocoa powder;
 200g (1 ¼ cup) all-purpose flour;
 24g (1 ⅔ tbsp) baking powder;
 100g (1 cup) melted dark chocolate;
 100g (¾ cup) yogurt.
 
METHOD
  1.  Blend chopped beets with eggs, whisk in sugar and salt.
  2.  Separately combine flour with cocoa powder and baking powder. Add it into the wet mixture. Whisk until no lumps left.
  3.  Pour into a parchment-covered baking pan, then bake at 180C/350F for 40 minutes.
  4.  Leave the cake to cool down, then poke with a fork.
  5.  Mix melted chocolate with sour cream and pour the mixture on top of the cake, spread evenly.
