Fluffy buns: the recipe to make them so delicious

Ingredients:
250 gr lukewarm milk
15 gr brewer's yeast
1 tablespoon of sugar
1 egg
70 gr sugar
5 gr fine salt
50 gr butter at room temperature
500 gr Manitoba flour
1 yolk
2 tablespoons of water
Directions:
Dissolve the yeast in the milk then pour it into a bowl and add a spoonful of sugar. Mix and add egg and 70 g of sugar. Add flour and salt, knead the dough and add the butter. Let it rise for 2 hours then divide it into balls of 60 gr each.
Let it rest for 15 minutes and then form the sandwiches.
Let them rest until doubled, then brush with yolk and water. Bake at 356°F(180°) for 20 minutes.
