Danish bread: how to prepare a delicious and fluffy recipe

Ingredients:
80 gr sugar
10 gr dry yeast
90 ml water
125 ml milk
2 eggs
500 gr flour 00
10 gr salt
250 gr butter
Topping:
Butter, sugar and almonds
Directions:
1. In a bowl, mix sugar, yeast, water and milk.
2. Then add the eggs, flour and salt.
3. Form a loaf and let it double in volume.
4. Then spread the butter and put it in the fridge.
5. Integrate the butter into the dough and make the folds, then leave in the fridge for 30 minutes.
6. Repeat this step 3 more times.
7. Then roll out the dough and divide it into 2 strips.
8. Fill them with butter and sugar and roll them up.
9. Assemble the brioche and let it rest for 2 hours.
10. Cover with beaten egg and almonds.
11. Bake at 356°F/180° for 45/55 minutes.
