Apple mini cakes: a simple and delicious idea!

INGREDIENTS
2 eggs
100g (½ cup) sugar
100ml (2/5 cup) oil
45g (3 tbsp) sour cream
lemon zest
8g (2 tsp) baking powder
160g (1 ¼ cup) flour
1 apple
walnuts
 
METHOD
  1. Pour eggs, sugar and lemon zest into a bowl. Whisk.
  2. Add sour cream and then oil. Whisk, then add flour and baking powder.
  3. When well whisked, pour into baking molds. Put chopped apple and walnuts on top.
  4. Bake for 30 minutes at 160 °C. Serve.
