Kardinalschnitte: the viennese dessert perfect to surpise your guests!

INGREDIENTS
For meringues:
7 egg whites
150g (0.7 cup) granulated sugar

For the biscuit:
5 egg yolks
2 eggs
70g (0.3 cup) granulated sugar
1 tsp (5ml) vanilla extract
Peel half a lemon
80g (0.6 cup) flour
Powdered sugar (for sprinkling)
 
For the cream:
1 tsp (5ml) vanilla extract
500ml (2.1 cups) whipping cream
50g (0.4 cup) powdered sugar
Red fruit jam
 
METHOD
  1. Whisk the egg whites with the granulated sugar to get a firm mixture. Line a baking sheet with baking paper, then use a dressing bag to make three strips of meringue twice, leaving space between the strips for the biscuit mixture.
  2. Preheat oven to 160 ° C / 325 ° F.
  3. Whisk the egg yolks, eggs, granulated sugar, vanilla extract and grated lemon zest until frothy. Then pour the cream into the dressing bag and fill the space between the meringue strips. Sprinkle everything with powdered sugar and bake in a preheated oven for approximately 25 minutes.
  4. To make the cream, whisk in the double cream with the vanilla extract and add the powdered sugar.
  5. Spread one strip of biscuit with red fruit jam, then coat with cream. Put another strip on top, sprinkle with powdered sugar and decorate with jam and strawberries.
