Homemade knots: extra soft and fluffy

INGREDIENTS
200ml (1 cup) of lukewarm milk
100ml (1/2 cup) of lukewarm water
20g (3 tbsp) of sugar
7g of dry yeast
70ml (1/4 cup) of vegetable oil
1 egg white
540g (4 1/2 cups) of all-purpose flour
6g (1 tsp) of salt
60g (1/4 cup) of butter + for brushing
150g of feta cheese
50g of curd cheese
Egg yolk + milk
Sesame seeds
METHOD
1. In a bowl add the milk, water, sugar, yeast, vegetable oil, and egg white and mix. Add the flour, and salt and continue mixing.
2. When the dough starts to form knead it with your hands. Add the butter and continue with kneading to obtain the smooth and elastic dough. Cover with cling film and let it rise for 2 hours, or until it doubles in volume.
3. Mix the feta cheese and curd cheese to prepare them for the filling of the buns.
4. After time has elapsed remove the dough from the bowl and transfer it to the working surface. Split the dough into 12 equal pieces and form the balls.
5. Roll out each ball and brush it with the butter. Spread the cheese mix on one side and roll it out. Flatten it a bit and form the shape of the knot.
6. Transfer the knots to the baking tray covered with parchment paper, cover them with cloth, and let them rise for 30 minutes.
7. After 20 minutes brush the knots with the egg yolk + milk and sprinkle with sesame seeds. Transfer to the oven and bake at 180°C/360°F for 35 minutes, or until they are golden brown.
