Veggies meatballs: how to make them delicious!

Here's a quick method to make amazing veggies meatballs!
INGREDIENTS:
INGREDIENTS:
- 750 g Zucchini
- 250 g Carrots
- 2 Eggs
- 150 g Smoked cheese
- Salt
- Pepper
- Garlic
- Greens
- Vegetable oil
PREPARATION:
- Grate the zucchini and carrots and mix together.
- Sprinkle over the salt and let stand until the liquid seeps out.
- Squeeze well with a kitchen cloth and pour into a bowl, add a beaten egg, grated garlic, grated cheese, salt and pepper and herbs.
- Form balls of the mixture and place them on a muffin tray. Bake for 20 minutes at 180º C (356ºF).
- Alternatively, form balls of the mixture and fry, flipping halfway.
