Pickled dried tomato: the easy homemade recipe

Ingredients:
Cherry tomatoes
Coarse salt
Vinegar
water
capers
Parsley or mint
Extra virgin olive oil
Seed oil
Garlic
Sterilized glass jars
Directions:
Wash the tomatoes well and cut them in half. Put them to dry for 2/3 days with coarse salt.
Then transfer them to a bowl and mix with large quantities of vinegar.
Then rinse them well, let them dry.
Then season them with capers, salt, powdered garlic, parsley or mint.
Stir and transfer the tomatoes to the jars, then add the two oils and wait for the air bubbles to form.
Then close and let rest for 2/3 weeks before enjoying them.
