Eggplant fans with potatoes: a unique dish to surprise your guests!

Ready in 40 minutes, everyone will ask for the recipe!

INGREDIENTS

1 Eggplant (500g/2 cups)

1 tbsp Salt

Filling:

450g (2 cups) Ground beef

2 tsp (14g) salt

1 tsp Pepper

1 Sweet pepper (120g/1 cup)

1 zucchini (250g/1.5 cup)

300g (1.5 cup) Cherry Tomatoes

1 Onion (50g/1 cup)

2 tbsp (30ml) Olive oil

Juice from half a lemon

METHOD

Prepare the eggplant, wash it, cut it, grate it and leave it on the side to soften.
Meanwhile, chop the vegetables and prepare the filling. Add salt to the vegetables and add oil, as well as lemon juice.
Wash the eggplant and make a flower.
Finely chop the meat and add spices, then stuff the eggplant petals. When everything is ready, bake at 200 degrees, 40 minutes. Enjoy.
