INGREDIENTS

2 eggplants
2 eggs
Breadcrumbs
Salt and pepper
Vegetable oil
METHOD
- Cut the eggplant in half and make cuts. To salt. Leave on for 15 minutes. Squeeze the juice.
- Blot with a paper towel.
- Beat eggs, salt, pepper. Dip eggplant in an egg and then in breadcrumbs.
- Deep-fry.
