Snowflake cake: the secret to make a moist and fluffy cake!

Here's the perfect cake for breakfast or for delicious snack time! 

INGREDIENTS
 3 eggs;
 150g (3/4 cup) white sugar;
 1 tsp vanilla extract;
 1 pinch of salt
 60ml (1/4 cup) vegetable oil;
 80ml (1/3 cup) milk;
 200g (1 2/3 cup) flour;
 7g (1 ½ tsp) baking powder.
 
METHOD
  1.  Preheat oven to 170C/340F. Cover 16 cm round pan with parchment.
  2.  Beat eggs with white sugar and vanilla until pale and very airy.
  3.  Pour in oil and milk. While still whisking, add flour one tablespoon at a time. Add baking powder and beat for the last time. Do not overmix!
  4.  Pour the batter into prepared pan and bake for 50-55 minutes. Let cool down before serving.
