Potatoes focaccia: how to make it fluffy!

This dough is absolutely easy to make and the result will surprise you!
INGREDIENTS

500g flour
370g water
15g yeast

1 tsp sugar
1 tsp salt
2 tbsp water
2 tbsp virgin olive oil
2 grated potatoes
Rosemary

Semolina flour
Fresh mozzarella
1 tsp salt

Fresh mozzarella
METHOD
- Mix yeast with water and sugar. Add the flour and mix very well. Add salt, and mix again until you have a smooth dough. Cover and let rise for two hours.
- Sprinkle semolina over a chopping board then place the dough on top, stretch and massage well.
- Place it on a baking sheet, stretch it out to form a rectangle.Cover and let rise for an hour.
- Push your fingers into the dough, then mix olive oil with water and sprinkle it all over the dough. Add
salt. - Grate the potatoes, add rosemary and olive oil, mix, and pour over the dough. Spread out well.
- Bake for 15 minutes at 230ºC (482ºF).
- Take out of the oven and add pieces of fresh mozzarella.
- Bake again until the cheese has melted. Cut into squares to serve.
