Ricotta cheese bread rolls: a tasty alternative to make them

Ingredients:
500 gr semolina flour
300 gr ricotta cheese
300 gr of water
200 gr sourdough
2 teaspoons salt
1 teaspoon sugar
Directions:
In the planetary mixer (but you can also do it by hand) insert sugar, water and the yeast. Stir and add the semolina and salt. After a few minutes add the ricotta. Make a nice compact dough and let rise all night.
Then form the sandwiches and let them rise for another hour. At this point bake at 400°F (200°) for 30 minutes.
