1) Potato doughnuts: a sweet treat to die for!
Why waste your leftover mashed potatoes when you can make these mashed potato donuts instead? The result is so fluffy and amazing!
INGREDIENTS
¼ cp warm milk;
5 g (0.2 oz) fresh yeast;
65 g (2.3 oz) flour;
150 g (5 oz) potatoes, boiled;
230 g (8 oz) flour;
1 egg;
50 g (1.7 oz) butter, softened;
30 g (1 oz) sugar;
1 tsp honey.
METHOD
Combine milk with fresh yeast and 65 g of flour to form a smooth paste. Cover and let sit in a warm place for 1 hour.
Mash boiled potatoes, add butter, egg and sugar, combine until smooth. Add yeast mixture and flour, use dough hooks to work the dough until smooth ball forms. Brush with a little bit of melted butter and set aside, covered, until doubled in size.
Divide the dough into 6 pieces and form each one into a donut. Place on a generously floured board and set aside for 30 minutes more.
Fry each donut for 3-4 minutes, until nice and golden on each side.

100 g (3.5 oz) sugar;
50g (1.7 oz) butter, room temperature;
2 tsp vanilla extract;
2 tsp dry yeast;
½ tsp salt;
Sugar for decor.
METHOD
Combine both flours with yeast and salt, make a well in the center and pour sugar, vanilla and water into it.
Working with dough hooks, knead the dough until it starts to come together. Add soft butter and continue to mix everything until the dough is smooth and uniform.
Form the dough into a ball, cover with plastic and set aside for an hour.
When the dough has doubled in size, divide it into 30 g (1 oz) portions and form each into a ball. Cover again and set aside for 20 minutes.
Meanwhile, heat vegetable oil to 180C/350F. Fry donuts for 4-5 minutes or until golden. Pass in sugar before serving.

• 2 tbsp butter
• 1 pinch salt
• 1 tsp sugar
• 1 tsp yeast
• 1 tsp baking powder
• 3 tbsp milk powder
• 2 tbsp warm water
• frying oil
• sugar and cinnamon icing powder
METHOD
Knead the dough. Let rise.
Divide the dough into 11 pieces. Roll up balls. Let rise. Form graffa skewers.
Let rise. Fry.
Grease graffa skewers with cinnamon sugar.

100 ml (3.4 fl.oz) warm milk;
20 g (0.7 oz) butter, room temp.;
20 g (0.7 oz) sugar;
10 g (0.3 oz) fresh yeast;
1 egg;
½ tsp salt.
METHOD
Dissolve a pinch of sugar in some warm milk and add fresh yeast. Set aside for couple of minutes to activate.
Whisk flour and salt together. Pour the warm milk and one egg in, knead until smooth dough forms. Start adding soft butter when the dough is formed, while still kneading it with stand mixer or by hand.
Cover the dough with plastic wrap and set aside for 1 hour.
Divide the dough into 8 pieces and roll each into a thin rope. Form each rope into a snail-like shape and place on a piece of parchment. Cover set aside for 20 minutes.
Heat vegetable oil over the low heat and carefully place risen donuts in it, removing the parchment. Fry each donut for 5-6 minutes per side.
Cover each donut in sugar and serve warm.
