Potato egg boats: a delicious recipe for a special dinner!

INGREDIENTS
Makes 6 servings:
6 medium/large potatoes
6 egg yolks.
100 g mozzarella, grated
2 tbsp olive oil
Salt and freshly ground black pepper
Bacon 12-14 strips
METHOD
- Preheat oven to 170°C (340°F).
- On a baking tray pour some olive oil onto the potatoes, sprinkle with salt and pepper, bake for 50 minutes.
- Cut off the tops of potatoes, remove the stuffing of potatoes and mix it with cheese and species.
- Wrap potato boats with bacon, fill with cheese filling and top with egg yolk. Bake for 15 minutes more.
