Crispy potato sandwiches: this recipe is so irresistible!

This recipe is so irresistible!

INGREDIENTS
 3 large potatoes, boiled, peeled;
 150 g (5 oz) flour;
 1 egg;
 30 g (1 oz) shredded parmesan;
 Sliced ham and cheese;
 Flour, egg, breadcrumbs for coating.
 
METHOD
  1.  Puree 3 boiled potatoes and mix them with flour, egg and parmesan. Season with salt and pepper.
  2.  Divide potato mixture in half and roll between two oiled sheets of parchment.
  3.  Layer ham and cheese over one of the layers and cover with another one.
  4.  Cut into 4 squares and shape them with oiled hands.
  5.  Dredge each potato squire in flour, coat in egg and pass through breadcrumbs.
  6.  Fry potato squires for 5-6 minutes (around 3 minutes per side) over medium-low heat until golden and crunchy.
