1) Fried puff pastry buns: perfect for a delicious breakfast!
Fried puff pastry buns are a stunning morning treat, with layers of rich, flaky puff pastry dough swirled with a fragrant sugar mixture!
Fried puff pastry buns are a stunning morning treat, with layers of rich, flaky puff pastry dough swirled with a fragrant sugar mixture!
INGREDIENTS
2 ½ cup flour;
1 tbsp dry yeast;
a pinch of salt;
1 egg;
200 ml (7 oz) warm milk;
2 tbsp vegetable oil;
1 cup melted butter;
vegetable oil for frying;
powdered sugar for serving.
METHOD
To make the dough whisk salt and yeast into a large bowl with flour. Add an egg, some vegetable oil, and warm milk.
Work the dough until smooth (around 10 minutes), then cover and set aside for an hour.
Divide the dough into 7 pieces and roll each one out as thin as possible (it should get transparent).
Cover your working surface with a portion of melted butter and place the first sheet of the dough on it. Stretch a little, brush with butter and add another layer of the dough on top, stretching it out to fit the first one.
Continue with leftover dough. Cut the layers making 8 rectangles. Pinch both sides of each rectangle, stretch a little and make a tube. Roll both ends of the tube moving into the center as shown in the video.
Fry each “bun” in preheated vegetable oil until golden, then serve dusted with powdered sugar.

2) Puff pastry swivels: a delicious breakfast idea!
INGREDIENTS
For the dough:
600 g (21 oz) flour;
200 ml (7 oz) warm water;
200 ml (7 oz) warm milk;
1 egg;
1 egg white;
1 tsp dry yeast;
90 g (3 oz) melted butter;
2 tbsp sugar;
Egg wash, sesame seeds.
For the butter mixture:
300 g (10 oz) butter;
90 ml (3 oz) vegetable oil.
For the filling:
90 g (3 oz) flour;
160 g (6 oz) sugar;
50 g (1.7 oz) butter, cubed.
METHOD
Mix water with milk and sugar, add dry yeast, and egg, an egg white and melted butter. Whisk to combine.
Start adding flour into the liquids by tablespoons. Knead the soft and sticky dough, cover it and set aside for an hour.
Divide the dough into 10 portions, cover again and let it rest for another 30 minutes.
Meanwhile, melt butter with oil and prepare a simple crumbly filling by combining flour, a pinch of salt, sugar and butter together.
Roll out each portion of the dough into a thin, almost see-through sheet brush with butter mixture and layer on top of one another.
Cut the dough into 12 strips and roll into a snail.
Make a well out of each snail as shown on the video, fill an empty space with crumbly filling, pinch the sides together and flip each pastry seam-side down onto a baking sheet.
Brush with an egg wash, top with sesame seeds and bake at 200C/400F for 20 minutes.

3) Raisin brioche: fluffy, easy to make and simply delicious!
INGREDIENTS
Dough Recipe:
• 150ml water
• 20g yeast
• 100g butter
• 100g sugar
• 1 tsp vanilla sugar,
• 1/2 tsp salt
• 450g flour
Filling and decoration:
• 120g raisins
• 20g butter
• 20g sugar.
METHOD
Dissolve yeast in warm water. Mix sugar, salt, vanilla sugar with flour. Add dissolved yeast, 50g butter and knead well.
While kneading add the remaining 50g butter. Put in a bowl and cover with a plastic wrap. Chill for 12 hours. Divide the dough into 8 pieces and roll into strips. Put raisins on a strip. Twist in the shape of a shell. Put the buns on a baking sheet and grease with butter, sprinkle with sugar. Let’s rise for 2 hours. Bake for 20 minutes at 190C/375F
