What is the Difference Between Rosti and Hash Browns?

Hashbrowns are an American staple. They consist of shredded or diced potatoes which are fried until golden. The texture is looser than that of potato rosti.

Potato rösti, a traditional Swiss dish, is similar to a hashbrown, but instead of a loose texture, potato rösti is tightly packed into a pancake form and then fried until crispy.

Potato Rosti Fritters Ingredients

  • Potatoes – use any potato you like; floury potatoes will have a fluffier texture, while waxy potatoes will be slightly crispier
  • Ham – adds a bit of protein to the dish
  • Shallot – can also be substituted with onion or even chives
  • Oil – use a neutral oil suitable for frying at higher temperatures like canola, peanut, sunflower, or Corn Oil
  • Flour – you just need a little to thicken the mixture

Tips

Fresh herbs (like parsley or cilantro) will add a bit of color and a touch of freshness.

The ham can be substituted with crispy bacon or smoked salmon.

Don’t leave out the shallot, the oniony flavor is what takes these fritters to the next level. If you don’t have shallots, you can also use red onion, chives (spring onion), or yellow onion.

If the rösti is falling apart and not sticking together, you can add a bit more flour to help them stick.

The potato rösti can also be made in the oven. Drop spoonsful of the potato rösti on top of a greased baking sheet and flatten slightly. Bake at 400°F until golden, turning halfway.

If you’re making a large batch of potato rösti, you can keep them warm in a low-heat oven.

Make the potato rösti gluten-free, by using gluten-free flour.

How to Store Potato Rosti Fritters

Store leftover potato rösti in the fridge for up to 3 days. Reheat in the oven or air fryer to retain crispiness.

Ingredients
Potatoes
500g (1.1 lb)
ham or bacon
125g (4.4 oz)
Shallot
1
All purpose flour
about 2 tbsp
salt
Pepper
Nutmeg

Instructions

Dice the shallot (or onion, if using) finely.

Chop the ham into fine pieces.

Grate the potatoes into a large mixing bowl.

Add the onions, chopped ham, salt, pepper, nutmeg, and flour and mix until all ingredients are combined.

Take out portions of the mixture and form into balls. Place the fritters in the pan and press down lightly with a spatula.
