1) Savory Christmas log
INGREDIENTS
white sandwich bread
200g cream cheese
200g smoked salmon
arugula

METHOD
1. Place the bread slices all in a row and slightly overlapping. Use a rolling pin to flatten them.
2. Fill with arugula, smoked salmon, and cream cheese. Roll it up and refrigerate for one hour.
3. Slice off a piece of the roll-up to make the log and cover in mayonnaise.

2) No-bake Christmas log
INGREDIENTS
3 slices of panettone ( you can use any type of panettone)
200g mascarpone cheese
a teaspoon of hazelnut cream
a teaspoon of espresso coffee.

METHOD
- Dip the slices of panettone in a coffee and milk mixture.
- Spread the mascarpone and hazelnut cream over them and roll everything up using a sheet of cling wrap.

3) Red velvet roll
INGREDIENTS
4 eggs
100g sugar
50g yogurt
50ml milk
1 tsp cocoa powder
150g flour
red food dye
1 tsp baking powder
for the filling:
strawberry jam, as needed
300g cream cheese
90g powdered sugar
METHOD
1. Beat together the eggs sugar, cocoa powder, yogurt, and milk. Add the food coloring (about one teaspoon of powder) and the baking powder. The original recipe asks for one tsp vinegar and one of baking soda, you can use this as an alternative to the baking powder.
2. Pour the cake batter into a baking sheet and bake at 180°C for 13/15 minutes. Let it cool.
3. Spread jam and cream cheese over the sheet cake and then carefully roll it up.
4. Refrigerate for a few hours and then dust with powdered sugar before serving.
