Mushroom stuffed potato cakes: they are delicious not to try!

INGREDIENTS:
800 gr of potatoes
Extra virgin olive oil
300 gr of champignon mushrooms
1 clove of garlic
Parsley
200 gr of flour (add more flour as needed)
50 g parmesan cheese
1 egg
100 gr of provola
Salt to taste.
Pepper as needed.
METHOD
- Store mushrooms, garlic, salt, pepper, parsley and saute in olive oil in a frying pan covered with a lid.
- Knead the cooked potatoes, add the flour, parmesan, salt and pepper and mix everything in a fine paste.
- Roll out the dough, scoop out the medallions. Fill them with prepared mushrooms and grated cheese.
- Bake on the pan each side for 10 minutes. Sprinkle medallions with parsley and enjoy.
