Creamy milk brioche: perfect for a special breakfast!

INGREDIENTS
10g yeast
60g sugar
3 small eggs
150ml milk
600g flour
6g salt
80g butter
1/2 lemon zest
MILK CREAM INGREDIENTS:
50g corn starch
60g sugar
1 pinch of salt
1 tbsp vanilla extract
600ml milk
300g ricotta
200ml fresh whipped cream
2 tbsp meringue powder
1 egg
1 tbsp fresh cream
METHOD
- Mix the ingredients for the dough. Allow the dough to rise. Divided into 7 parts. Knead the balls and place in a baking sheet covered with parchment paper. Let rise.
- Add starch, sugar, salt, vanilla and milk to the saucepan. Heat until thickened. Cool. Add the ricotta. Beat with a mixer, add cream and meringue powder. Beat.
- Mix one egg with cream and grease the raised buns.
- Bake for 30 minutes at 170C/340F.
- After the buns have cooled, fill them with cream. Sprinkle with powdered sugar.
