Stuffed pumpkin: the perfect idea for a dinner party!

INGREDIENTS
• 1 large pumpkin
• 8 garlic cloves, minced
• 1 ½ chopped onion
• Black pepper to taste
• Salt to taste
• 3 tbsp of olive oil
• 1kg shrimp
• 2 chopped tomatoes
• ½ cup passata
• ¼ tsp coriander
• 2 finger peppers
• 1 can sour cream
• 1 cup cottage cheese
• 100g mozzarella
METHOD
- Open the pumpkin, remove the seeds.
- Mix 5 cloves of garlic with ½ onion, black pepper, salt and olive oil.
- Rub this paste inside the pumpkin, cover and bake at 180C/350F for 30 minutes.
- Season the shrimp with salt, black pepper and lemon juice.
- Fry the shrimp in a hot pan with a little olive oil, season with salt and pepper and set aside.
- Fry the remaining onions, garlic, add tomatoes and cook for 10 minutes.
- Add coriander, pepper, cream, cottage cheese, shrimp and add salt.
- Spread the shrimp with sauce inside the pumpkin and mix with the cooked pumpkin from the inside.
- Top with grated mozzarella cheese.
- Bake for 20 minutes at 180C/350F or until brown.
