Stuffed pumpkin: the perfect idea for a dinner party!

INGREDIENTS
• 1 large pumpkin
• 8 garlic cloves, minced
• 1 ½ chopped onion
• Black pepper to taste
• Salt to taste
• 3 tbsp of olive oil
• 1kg shrimp
• 2 chopped tomatoes
• ½ cup passata
• ¼ tsp coriander
• 2 finger peppers
• 1 can sour cream
• 1 cup cottage cheese
• 100g mozzarella
 
METHOD
  1. Open the pumpkin, remove the seeds.
  2. Mix 5 cloves of garlic with ½ onion, black pepper, salt and olive oil.
  3. Rub this paste inside the pumpkin, cover and bake at 180C/350F for 30 minutes.
  4. Season the shrimp with salt, black pepper and lemon juice.
  5. Fry the shrimp in a hot pan with a little olive oil, season with salt and pepper and set aside.
  6. Fry the remaining onions, garlic, add tomatoes and cook for 10 minutes.
  7. Add coriander, pepper, cream, cottage cheese, shrimp and add salt.
  8. Spread the shrimp with sauce inside the pumpkin and mix with the cooked pumpkin from the inside.
  9. Top with grated mozzarella cheese.
  10. Bake for 20 minutes at 180C/350F or until brown.
