1 Potato sandwiches
INGREDIENTS
750g potatoes
50g breadcrumbs
1 egg
100g sliced cheese
100g ham
Salt
Pepper
Rosemary
Olive oil
METHOD

METHOD
- Boil the potatoes in plenty of water and allow them to cool completely, peel it and mash it with a fork. Add egg, salt, pepper, rosemary and breadcrumbs, mix well.
- Take a piece of dough and form squares.
- Fill them with cooked ham and cheese, close and grease with butter.
- Cook them in a frying pan for 5 minutes on each side.
2 The perfect croque monsieur/madame recipes
INGREDIENTS
8 Bread slices
1 1/2 cups grated mozzarella cheese
12 slices of ham
Sauce
100g Parmesan cheese
3 tbsp butter
3 tbsp flour
200ml milk
salt
Pepper
1 pinch Nutmeg

METHOD
- Melt butter in a medium saucepan, add flour and mix well.
- Gradually add milk, mix until smooth.
- Add salt, pepper, nutmeg and parmesan cheese.
- Spread sauce on bread, top with 3 slices of ham, grated cheese, bread slice, béchamel sauce and mozzarella cheese
- Bake at 180°C/350°F for 10 minutes, until golden brown.
3 Square croques
INGREDIENTS
3 potatoes, peeled;
3 eggs;
10 slices ham;
10 slices cheese;
2 cups flour;
2 cups breadcrumbs;
vegetable oil for frying.

METHOD
- Boil peeled potatoes until cooked through. Mash them with potato masher, add salt and pepper, 1 cup flour and stir in one egg.
- Layer cheese and ham on each other. Cut ham and cheese “sandwich” into cubes.
- Wrap each ham and cheese cube into potato dough, dredge in flour, dip into beaten egg and sprinkle with breadcrumbs.
- Fry in preheated vegetable oil until golden on each side (about 4=5 minutes).
