Sweet potato brioche: perfect as alternative to bread!

INGREDIENTS
• 280g Sweet potato
• 400g flour
• 4g yeast
• 30g sugar
• 2 eggs
• 25 g oil
• Sesame seeds
METHOD
- Peel the sweet potato.
- Cut it into slices and steam for 15 minutes.
- Mix flour, yeast and sugar.
- Pour two eggs in the sweet potato and crush until it forms a puree.
- Pour the puree into the flour and mix, add oil and mix again.
- Knead very well, cover and let stand until doubled in size.
- Knead for 5 minutes. Form a ball, sprinkle over some flour and use a rolling pin to flatten.
- Use a glass to get several discs of the dough.
- Cover with cling film and let stand until the discs double in size.
- Put one end of a roller in water and then on a plate with sesame. Then place in the center of each disc.
- Place several discs in a pan, cover and cook for 3 minutes.
- Flip each disk until golden brown.
- Bake for 12-15 minutes at 175ºC (347ºF).
