Homemade Doner kebab: how to make it step by step

INGREDIENTS
1 kilo of pork loin head steak cut in half
5 pieces of dried guajillo chili deveined and clean, powdered (for marinade)
1/2 cup achiote paste (for marinade)
1/4 cup vinegar (for marinade)
3 tablespoons pineapple juice
1 teaspoon garlic powder (for marinade)
1 pinch of allspice (for marinade)
1 pinch of dried oregano (for marinade)
3 pinches of salt (for the marinade)
1 package of smoked bacon (200 g)
1 piece of peeled and heartless pineapple
 

METHOD
  1. Preheat the oven to 190 ° C.
  2. Mix all the marinade ingredients and add to the meat. Marina for 20 minutes.
  3. In a baking sheet, place the meat on top of the other to simulate the top. Between layers place 3 to 4 strips of bacon according to size. Repeat until you finish with all the meat.
  4. Insert a thick wooden stick in the center to hold the meat. Reservation.
  5. Cut a thick cube of the pineapple and insert it to the top of the wooden stick to hold it. The rest of the pineapple chop it into thin slices. Reservation.
  6. Bake the meat top and turn constantly so that the cooking is even. Once cooked, remove and let stand a few minutes.
  7. Serve and accompany with corn tortillas, sauces and pineapple.
