4 ways to cook salmon: you must try them right now!

1 Salmon Wellington
INGREDIENTS
2 tbsp butter
2 cloves garlic, chopped
½ medium onion, chopped
5 oz spinach
1 tsp salt (for spinach)
1 tsp pepper (for spinach)
⅓ cup breadcrumbs
4 oz cream cheese
¼ cup cheese, shredded
2 tbsp dill, chopped
1 sheet puff pastry
1 salmon filet
1 tsp salt (for salmon)
1 tsp pepper (for salmon)
1 egg, beaten

PREPARATION
- Preheat oven to 425°F.
- In a pan over medium heat, melt butter, add the garlic and onions, cooking for 3 min.
- Add the spinach, salt, and pepper.
- Add the breadcrumbs, cream cheese, cheese and dill, mix until combine.
- Place the salmon in the middle of the pastry and season with salt and pepper.
- Place spinach mixture on top of the salmon
- Wrap the salmon with puff pastry
- Brush the beaten egg on the top and sides of the pastry.
- Bake for 20-25 min at 425°F/220°C
2 Potato and salmon balls
INGREDIENTS
2 tbsp Flour
1 cup cooked salmon
Vegetable oil
3 potatoes
Black pepper
1 tablespoon parsley
Salt
1 yolk
1 cup breadcrumbs
METHOD

METHOD
- Cook the potatoes, let them cool and grate in the bowl.
- Mix the potatoes with the yolk, flour, parsley, salt and pepper.
- Add salmon and mix.
- Form balls and roll them in breadcrumbs. Fry in hot oil and serve.
3 Savory avocado pastries
INGREDIENTS
1 avocado, peeled, seed removed;
2 sheets puff pastry;
6 slices smoked salmon;
egg wash.

METHOD
- Preheat your oven to 200C/400F. Place a layer of parchment paper on top of your baking sheet.
- Slice avocado thinly. Place each slice on top of the puff pastry sheet and, using a toothpick, trace a border repeating the shape of an avocado slice.
- Step 1 cm (about ½ inch) away from the avocado and cut the pastry repeating the shape of an avocado slice.
- Roll smoked salmon and place it into the hollow in the middle of an avocado slice. Brush puff pastry with some egg wash. Bake for 12-15 minutes.
4 Salmon dome
INGREDIENTS
8 slices smoked salmon;
1 medium avocado;
1 tsp olive oil;
2 eggs;
1 tbsp cream cheese;
salt and pepper to taste;
2 slices toasted bread;
chopped dill for serving.

METHOD
- Cover bottom and sides of two ramekins with sliced salmon.
- Cut out two pieces of plastic wrap and lay it into two small bowls that could fit an egg in it. Brush the wrap with some olive oil and beat an egg into it. Gather the edges of plastic wrap and tie together. Boil the eggs for 4-5 minutes.
- Meanwhile mash cream cheese and avocado flesh together. Season with salt and pepper.
- Remove plastic from the eggs and place each one into prepared ramekin. Top with mashed avocado and toasted bread that has been cut out to fit the ramekin.
- Flip onto a plate and remove ramekin carefully. Top with chopped dill before serving.
