Puff pastry chicken: how to cook a whole chicken in a delicious and unique way!

The perfect way to wrap a whole chicken in pastry!
INGREDIENTS
INGREDIENTS
1 Chicken
Prepared dough
1/2 yellow diced onion
1 small diced carrot
1/2 rib diced celery
1 to 2 tablespoons minced rosemary
kosher salt
freshly ground black pepper
cayenne to taste
2 teaspoons olive oil
For the sauce:
1 tablespoon butter
1/2 cup veggies from inside chicken
salt
2/3 cup white wine
1/3 cup pan drippings and/or a splash of stock
4 tablespoons butter
1 egg yolk beaten with 2 teaspoons of water
METHOD
- Mix veggies with species and olive oil.
- Sprinkle the chicken with salt and put the veggies into the chicken. Wrap the chicken with the dough and spread the egg mixture all over it and sprinkle with sea salt.
- Bake for 1 hour and 15 minutes at 200 ‘ C (400 F’)
- Take the veggies from the chicken and put it in the pan, add in butter, salt, wine and dripping from the pan. Pour the sauce over the chicken.
