Veggies muffin: fluffy, easy and so delicious!

Ready in 30 minutes, they will be a hit!
INGREDIENTS

2 eggs;
½ cup zucchini, cut into cubes;
½ cup canned red beans, drained;
½ cup canned corn, drained;
1 tsp salt;
1 tsp ground black pepper;
1 tsp garlic powder;
1 tsp dried herbs;
1 cup shredded cheese;
1 cup milk;
1 cup milk;
2 cups flour;
3 tsp baking powder;
3 tsp baking powder;
2 tbsp vegetable oil.
- METHOD
Preheat oven to 200C/400F. Grease a muffin tin for 12 muffins. - To start the batter whisk dry ingredients: flour; baking powder and spices together. Separately combine liquids: milk, eggs and oil.
Add liquids into dry mixture and mix until smooth batter forms (do not overmix!). Add zucchini, corn and beans. - Pour the batter into each muffin tin cup filling it 2/3 way up.
- Bake for 25 minutes and leave to cool down until warm before serving.
