Zucchini muffin: fluffy, easy and so delicious

Ingredients:
500 gr of grated zucchini
150 gr grated carrots
1 diced pepper
4 spring onions
4 eggs
2 tablespoons instant yeast for savory pies
220 gr grated cheese
300 gr flour

Directions:
Grate the courgettes and carrots and place in a bowl, then grate and add the cheese. Cut the peppers and spring onions and add to the mixture, then add the eggs, yeast, flour and pepper. Mix well and put the dough in the greased muffin mold, bake at 356°F (180°) for 25-30 minutes.
