3 pineapple recipes that are almost too pretty to eat!

1 Pineapple donuts
INGREDIENTS
6 pineapple rings;
1 cup flour+ ½ cup for dredging;
2 tsp baking powder;
1 ½ cup water;
2 tbsp sugar;
vegetable oil for frying.

METHOD
- Mix dry ingredients (1 cup flour, sugar, baking powder) together. Add water and whisk to combine until no lumps left.
- Dredge pineapple rings in leftover ½ cup flour. Deep into a batter, making sure it is covered from all sides.
- Fry pineapple donuts in preheated to 180C/350F oil for 2-3 minutes or until golden.
- Serve sprinkled with powdered sugar and drizzled with caramel sauce.
2 Pineapple coconut yogurt cake
INGREDIENTS
4 eggs;
150 g (5 oz) sugar;
50 g (1.7 oz) cornstarch;
250 g (8.8 oz) flour;
1 cup yogurt;
1 ½ tsp baking powder;
pineapple slices and shredded coconut.
METHOD

METHOD
- Preheat oven to 180C/350F.
- Whisk eggs with sugar until fluffy and pale. Pour yogurt in and whisk to combine.
- Separately whisk coconut, flour and cornstarch with a pinch of salt and baking powder.
- Add wet mixture into the dry ingredients and stir until no lumps left.
- Pour cake batter in to the parchment covered baking pan and top with sliced pineapples. Sprinkle coconut on top.
- Bake for 30-35 minutes and let cool down before serving.
3 Pineapple upside-down cake
INGREDIENTS
2 eggs
a pinch of salt
120g brown sugar
½ cup vegetable oil
200g flour
½ cup milk
10g baking powder

METHOD
1. Beat the eggs together with the salt. Add the sugar, oil, milk, and the flour. Mix the cake batter until fluffy, then blend in the baking powder.
2. Sprinkle some brown sugar onto the inside of a cake pan, place the pineapple slices over the brown sugar and pour the batter over them.
3. Bake at 180° for 30 minutes.
