4 cheesy potato recipes for a quick and delicious dinner!

1. Potato sandwiches
INGREDIENTS
750g potatoes
50g breadcrumbs
1 egg
100g sliced cheese
100g ham
Salt
Pepper
Rosemary
Olive oil
METHOD

METHOD
- Boil the potatoes in plenty of water and allow them to cool completely, peel it and mash it with a fork. Add egg, salt, pepper, rosemary and breadcrumbs, mix well.
- Take a piece of dough and form squares.
- Fill them with cooked ham and cheese, close and grease with butter.
- Cook them in a frying pan for 5 minutes on each side.
2. Grated potato fritters
INGREDIENTS
500 g (1 pound) potatoes, peeled;
4 tbsp flour;
4 tbsp cheese, shredded;
1 egg;
1 small onion, chopped;
1 garlic clove, minced;
½ tsp (each) salt and chili powder;
4 tbsp vegetable oil.
METHOD

METHOD
- Shred peeled potatoes using largest grater you have.
- Rinse potatoes and squeeze them dry.
- Combine shredded potatoes with salt, chili powder, egg, cheese, flour, onion and garlic.
- Heat 4 tbsp of vegetable oil over medium heat and fry fritters for about 4 minutes on each side or until golden and crispy on the outside but soft in the middle.
- Serve right away with your favorite sauce.
3. Potato and salmon balls
INGREDIENTS
2 tbsp Flour
1 cup cooked salmon
Vegetable oil
3 potatoes
Black pepper
1 tablespoon parsley
Salt
1 yolk
1 cup breadcrumbs
METHOD
2 tbsp Flour
1 cup cooked salmon

METHOD
- Cook the potatoes, let them cool and grate in the bowl.
- Mix the potatoes with the yolk, flour, parsley, salt and pepper.
- Add salmon and mix.
- Form balls and roll them in breadcrumbs. Fry in hot oil and serve.
4. Crispy potato chicken
INGREDIENTS
• 3 chicken breasts
• 50g cheese
• 3 potatoes
• 1 egg
• 100g flour
• 3 eggs
• 100ml vegetable oil
METHOD
• 3 chicken breasts

METHOD
- Cut the chicken breasts in half 2 times
- Put inside the cheese. Cover with parchment and pound with a rolling pin (you should have 6 fillets with cheese)
- Grate the potato and mix with the egg
- Dip 3 breasts in flour, then in potatoes (on both sides)
- Roll other 3 breast in flour, in the egg, put it on top of the first 3 breastsand close with potatoes
- Fry until golden brown
