Stuffed eggplant rings: the easy and full-flavored side dish

Ingredients:
3 eggplants

1 carrot
2 frankfurters or ham
Chives or parsley

Directions:
Cut the aubergines into slices, then put them in water and salt for 30 minutes.
Then cut the carrot, frankfurter, chives and eggplant pulp. Mix together with the eggs and salt. Arrange the eggplant rings in a pan and fill them, cook 10 minutes on each side and serve.
